Claytonia
Claytonia perfoliata

Claytonia, also known as Winter Purslane and Miner’s Lettuce is a great winter salad. It is quick growing and forms rosettes of thick oval leaves.
Long stems bear the white flowers above 2 joined leaves which make a circular disc, hence the Latin name Perfoliata which means ‘to pierce the leaf.’
Claytonia is a valuable addition to winter salad mixes and contains Vitamin C. Claytonia prefers cooler temperatures to germinate and will not germinate well over 12°C.
How to grow:
Plant in the miscellaneous section of your rotation.
Sow direct into well-prepared ground by broadcasting the seed. This can be done anytime from August until November.
Plants can be thinned to 5-10cm apart.
Harvest single leaves or the whole plant through the winter.
Pests and diseases:
Claytonia is easy to grow and has little in the way of pest and disease problems. However, young plants can be susceptible to slug damage.
How to cook:
Claytonia can be cooked like Spinach, but we find it is best eaten raw in salads.
