Horseradish

We sell horseradish as slim, shooting root cuttings, otherwise known as thongs, in threes. They are sent out from March until May, (stocks permitting). You can pre-order. Horseradish belongs to the brassica family like mustard and wasabi. The first leaves, which are thin and spiky are quite different to the mature leaves which are broad and flat. The roots, which have a pale tan skin and creamy white flesh, are used as a spicy condiment.

How to grow:
Horseradish needs a permanent position in the garden. Its roots are very long so it is difficult to eradicate once established. Plant in well prepared ground in an open sunny position. Clear the ground of weeds and dig in some compost or well rotted manure. Horseradish likes a rich, moist soil. Dig a hole deep enough to put the root cutting in vertically then replace the soil and pat it down just leaving the shooting tip above the soil surface. Allow 30 cm between the plants. Water in and continue to water if conditions are dry until the plants have established. The plants will need a few years before the roots are large enough to dig for eating, but it’s worth the wait.

How to make home made horseradish sauce:
Dig up some mature roots and scrub and peel. Beware, before chopping it! Horseradish gives off a potent smell which can effect the eyes and airways so the best way to prepare horseradish is in a small electric grinder or food processor. Don’t breath in the fumes when you take the lid off. Alternatively grate the root at arms length! Mix the prepared root with a little white wine vinegar and then stir in some double cream, refrigerate and use the same day. I absolutely love the pungent hit of home made horseradish sauce and the way it seems to clear your sinuses. Its not just for beef either, vegetarians can enjoy it with beetroot or potato dishes as well as a veggie Sunday roast.
